Step 1
Pre-heat oven to 180°C (356°F).
Step 2
In a medium bowl, whisk together the 0 calorie brown sugar, applesauce, olive oil, vanilla extract and red food coloring until well combined. Fold in the flour, cocoa powder and baking soda then fold in the white chocolate chips.
Step 3
Scoop the dough and form into 3 balls, place onto a prepared baking tray and flatten slightly. Bake the cookies for 8 minutes.
Step 4
Let the cookies cool on the tray for 5 minutes before transferring to a cooling rack to cool completely.
