Vegan Biscoff Blondies

You wont believe these biscoff blondies are 100% vegan! They are a little crisp on the outside and super chewy on the inside with big white chocolate chunks 🥹 so good 🤌
Also just letting ya know all vegan white chocolate is so different! Some vegan white chocolate just melts into an oily mess. I can only recommend the @sweet_william_chocolate 100g block from coles to make this. Same goes with vegan butter! I can only recommend the @nuttelexspread Buttery for this recipe 🥰

Step 1
Preheat oven to 160C fan forced
Step 2
Mix the flax egg with the 6 tbsp of water and set aside, this is your flax egg
Step 3
Whisk together the sugars with the softened butter for 2 minutes then whisk through the vanilla, flax egg and the 1/3 cup of melted biscoff
Step 4
Sift and fold in the flour and sea salt until just combined then fold in the white chocolate
Step 5
Transfer the mixture to a lined brownie tin, spread out evenly and then bake for 35 - 45 minutes
Step 6
Allow to cool completely then pour over the remaining melted biscoff and sprinkle over the biscuits. Cut into desired sizes and enjoy!
