Instructions

Step 1
Preheat oven to 200℃

Cut hole in the baguette (leaving the bottom in tact) and pull the bread to create wells (you can save the excess bread and make croutons).

Drizzle olive oil in the wells and sprinkle some mozzarella and basil
Step 4
Crack an egg in the well, top with parmesan, salt and pepper and place on an oiled baking sheet (this will help the bottom crisp up); bake for 10-15 minutes until eggs are cooked to your liking.
