Instructions
Step 1
Season with salt, pepper and garlic powder
Step 2
Grill on indirect heat at 250°F until it reaches an internal temperatude of 125°F (rare guga) or 135°F (medium rare) or 145°F (medium) or 155°F (medium well) or 160°F (well done). it should take around 45 minutes for medium rare
Step 3
Then sear it either on the grill, on a pan with butter/oil, or with a flamethrower. searing it will still increase the internal temperature by around 10°F and then the carryover by 5°F. so we will want to pull out the steak approximately 15°F below the desired final internal temperature. to sear on the bbq grill, we need to increase the temperature of the grill (open the lid so that air lids the charcoal and increases the heat)

Let it rest for 5 minutes

SOUS VIDE: Salt pepper garlic powder organic thyme / 135°F 3 hours / Pet dry / Sear with flamethrower / Rest 5 mins
