Bánh Cam - Vietnamese Sesame Balls

Instructions

Step 1
- Rinse the mung beans until water runs clear then soak for at least 6 hours or overnight with warm water. Be sure water is at least an inch over the beans

- After 6 hours, rinse, then drain beans

- Add to a large steamer and steam for 45 minutes
Step 4
- Check for doneness by squeezing it between your fingers, it should mash up easily

Let cool for 10 minutes

Add to a food processor and processed into a creamy consistency then add to a large mixing bowl

While the mung beans is still warm, add the following ingredients:

* 1 1/4 cup Sugar

* 1/2 tsp Salt

* 2 tsp Vanilla extract

* 1 cup coconut flakes sweetened\unsweetened

Mix well, roll into round balls then set aside

Liquid for Dough

In medium size pot add:

* 3 1/2 cup water

* 2 1/2 cup sugar, bring to a boil

* 4 Tbsp Vegetable oil

* Stir well, remove from heat

* Add 1 cup instant mashed potatoes or you can use fresh potato (mashed), stir well

* Add 4 tsp Vanilla Extract, stir

Let liquid cool for about 10 minutes

In another large mixing bowl add:

2 bags (16 oz) Glutinous Rice Flour

6 Tbsp Rice Flour

4 tsp Baking Powder

Stir until well combined

Slowly add in the warm liquid mixture to dough mix in batches

Knead until dough is smooth and soft

If dough feels dry after throughly mixed, add a few more drops of water and knead

Cover, let dough rest for 15 minutes

Making the sesame balls

Add a whole bag of white Sesame Seeds to a large mixing bowl

Add some oil to a small bowl to use on hands so dough doesn’t stick. If using gloves no need for oil

Prepare a large baking tray fully covered with Saran Wrap to place the Bánh Cam on

Spread oil onto both hands, grab some dough, roll into a ball, flatten dough into a disc shape then add the mung bean filling, closed dough securely. If you feel there is air, squeeze the ball tight to get the air out. Air in the sesame balls while frying could result in it popping or exploding

Roll the sesame balls into bowl of sesame seeds, with both hands gently press the sesame seeds into the dough then smooth it out. (Pressing\squeezing the sesame seeds into the dough ensure it doesn’t fall out while frying)

Repeat until all dough are used up. If you have extra dough you can make into any shapes you like without the filling

Frying

Heat a medium size nonstick pot with Vegetables oil about 3 inches of oil in pot

Wait until temp reaches 350F

Slowly add the Bánh Cam into the oil, quickly use a chopsticks to constantly move it around. Continue frying until golden brown.
