Ingredients
4 servings
¼ cupfat-free mayonnaise
1.5 Tbspprepared pesto
1 tsplemon juice
½ tspdried oregano
⅛ tspblack pepper
fresh ground
4French rolls
6-inch, preferably whole wheat, cut in half lengthwise
0.5 lbsturkey breast
sliced, cooked, lean
8 slicestomato
8fresh arugula leaves
or spinach
1.5 ozpart-skim mozzarella cheese
thinly sliced
Instructions
Step 1
1. Preheat the oven to 350°F.
Step 2
a. Mix the mayonnaise, pesto, lemon juice, oregano, and pepper in a small bowl.
Step 3
2. Put the cut rolls on a baking sheet. Place in the oven for 5 minutes and then remove.
Step 4
3. Preheat the broiler.
Step 5
a. Spread the pesto mixture evenly between the French rolls.
Step 6
4. Layer the turkey, tomato, arugula or spinach, and mozzarella cheese on the rolls.
Step 7
5. Place the sandwiches on a baking sheet and broil for 2 minutes until cheese is melted.
