Instructions

Prepare Chicken

Step 1
Butterfly chicken breasts to make 2 thin fillets per breast. Wrap fillet individually in saran wrap and pound with meat mallet till thin
Step 2
In one bowl add flour, salt, and pepper. In separate bowl beat eggs. In Another separate bowl combine Italian bread crumbs and panko bread crumbs
Step 3
Take chicken fillet and lightly coat in flour mixture. Then coat in egg mixture. Then coat in bread crumb mixture

Fry Chicken

Step 4
In deep pot, preheat frying oil to 350F. Gently add chicken into oil and fry till golden brown

Bake Chicken

Step 5
On sheet pan, lay fried chicken and top with marinara sauce. Layer mozzarella on top of marinara and grate fresh parmesan on top.
Step 6
Broil chicken on high using top rack of oven till cheese is bubbling and melted. Remove from oven
Step 7
Garnish with chopped parsley
