Instructions

Step 1
Bring water, salt, brown sugar, thyme, rosemary, garlic, apples and lemon to a boil in a large stockpot, reduce heat to low, and simmer, stirring occasionally, 5 minutes. Remove from heat. Stir in ice and allow to cool completely (1 hour).
Step 2
Add turkey to brine mixture. Needs to brine for 48-72 hours
Step 3
Remove turkey from brine, rinse off and pat dry with paper towels, apply garlic herb butter rub on turkey, very important to get under skin, inject remaining butter into into the turkey, and stuff the turkey with onion, apples & lemon
Step 4
Prepare smoker bringing internal temperature to 250°; maintain temperature 15 to 20 minutes.
Step 5
Smoke turkey, maintaining temperature inside smoker at 240°
Step 6
Cook for 30-40 minutes per pound or until a meat thermometer inserted into thickest portion registers 165°
