Instructions

Step 1
Preheat the oven to 400°F (200°C). Line a 6-inch (15 cm) square baking dish with parchment paper (or grease well with approximately 1 tablespoon [15 ml] melted coconut oil).
Step 2
Heat the coconut oil in a large skillet and sauté the onion for a few minutes until starting to brown.
Step 3
Crumble in the ground beef, stir well, and cook until almost no pink remains, about 10 minutes.
Step 4
Push the meat and onion to the edge of the skillet. In the center, add the garlic and cook until fragrant. Stir everything together.
Step 5
Add the cumin, salt, pepper, and cayenne (if using). Stir well, and continue cooking until the meat is fully cooked, about 5 more minutes. Remove from the heat.
Step 6
In a large bowl, whisk the eggs. Add a cup of the meat mixture to the eggs, stirring constantly to keep the eggs from scrambling. Add the rest of meat and stir well.
Step 7
Pour the egg and meat mixture into the baking pan. Sprinkle the cheese over the top.
Step 8
Cook for 20 minutes. Test for doneness by inserting a butter knife into the middle; when it comes out clean, remove from oven. Let cool for a few minutes, then cut into bite-size squares.
