Blueberry Fields Salad

Ingredients
8 servings
½ cupbalsamic vinegar
⅓ cupblueberry preserves
⅓ cupextra Virgin olive oil
2 x 5.5 ozspring greens and baby spinach mix
packages
2 cupsfresh blueberries
1 cupwalnuts
chopped, toasted
1red onion
small, halved and sliced
1 cupcrumbled blue cheese
Instructions
Step 1
Whisk together balsamic vinegar, next 2 ingredients, and salt and pepper to taste in a small bowl.
Step 2
Combine spinach mix and next 4 ingredients in a large bowl.
Step 3
Drizzle with desired amount of vinaigrette, and toss to combine.
Step 4
Serve immediately with remaining vinaigrette.
