Low Carb Cajun Shrimp, Rice and Sausage Bowel
This is a Deviation from a recipe I found on YouTube from YouTuber Fit Men Cook. His recipe is supposed to be Low Carb but I think we can do better than 23 carbs total and 16 net carbs. So here it Goes. Don't pay attention to the Nutritional values assigned by Whisk on this recipe cause they are wrong. for some reason it wants to assign the hearts of palm rice the same values as regular rice.

Ingredients
4 servings
1 tablespoonsavocado oil
0.25 lbshrimp
jumbo, peeled and deveined, chopped into 1-inch pieces
3 ozChicken Andouille
chopped into 1/2-inch pieces
½ tablespoonsfresh garlic
minced
0.25white onion
medium, chopped into 1-inch pieces
0.25green bell pepper
chopped into large chunks
0.5celery stalks
chopped
sea salt
¾ tablespoonsCajun seasoning
9 ozHeart of Palm
brown rice
1 cuplow sodium chicken broth
or vegetable broth
3 tablespoonstomato paste
2bay leaves
optional

Instructions
Step 1
1. Set a large nonstick pot on high heat. Once hot, add oil and shrimp. Sear and cook the shrimp until plump and sear marks appear along the edges, about 5 minutes. Remove the shrimp from the pot.
Step 2
2. Add the chopped sausage and cook for 2 minutes to get a good sear.
Step 3
3. Reduce the heat to medium and add garlic, onion, bell pepper and celery. Cook for about 3 minutes, until the onions turn brown and translucent.
Step 4
4. Add Cajun spice mix and Sea Salt. Continuously fold everything together, ensuring all the ingredients are covered in seasoning.
Step 5
5. Add Chicken Broth, Bay Leaves and Tomato Paste, bring to a gentle simmer on LOW heat. Halfway cover the pot and cook until about 80% of the liquid has been evaporated, or until you have reduced the chicken stock to the point a sauce starts to form, about 15 min.
Step 6
6. Remove the bay leaves, fold in the Cooked shrimp and season to taste with sea salt & pepper.
Step 7
Add Heart of Palm Brown Rice and continuously stir for about 4 minutes.
Step 8
7. Garnish with parsley and enjoy!
