Ingredients
8 servings
3 Tbspgrape seed oil
divided
1.5 lbandouille sausage
1.5 lbboneless chicken thighs
but into bite size pieces
2 Tbspcajun seasoning
divided
1 easweet pepper
large diced
3 easpanish onion
large diced
1 eajalapeno
small diced
5 eacelery stalks
large diced
5 eagarlic cloves
roasted, minced
1 tspdried thyme
1 tspdried oregano
1 tspsalt
½ tsppepper
1 tspchipotle chili powder
1 tspgumbo file
2 tspworcestershire sauce
1 ½ cupslong grain rice
1 qrtchicken broth
1.5 lbraw shrimp
deveined and peeled
0.5 lbshishito peppers
pan seared for garnish
Instructions
Step 1
Heat 2 tbsp grape seed oil in large sauce pan; add sausage and brown; remove and set aside.
Step 2
Add chicken thighs and sprinkle 1 tbsp Cajun seasoning and cook to almost done; remove and set aside.
Step 3
Add remaining tbsp of oil and sauté peppers, onion, celery and garlic.
Step 4
Stir in tomatoes add all seasonings remembering the additional 1 tbsp Cajun seasoning. Stir and scrape bottom to remove all fond, flavoring from bottom of pan.
Step 5
Add in rice and broth; bring to boil, cover and reduce heat to simmer for 25 minutes.
Step 6
Place the shrimp on top of the mixture, stir into, cover with lid and cook for another 5 minutes.
Step 7
Serve with seared Shishito peppers and Enjoy!
