Instructions
Step 1
Begin by adding the coconut shreds, almond flour, coconut yogurt, salt and honey into a mixing bowl. Mix the ingredients together until they form a crumbly ball. If the mixture is too wet, simply add a little more coconut shreds.
Step 2
Scoop about 1 tbsp worth of the mixture and roll it into a ball. Place on parchment paper and repeat with the rest of the balls. This batch makes about 8 balls, but feel free to double the batch for more or make 8 larger balls! At this point, I like to place them in the fridge to set and solidify while I make the chocolate ganache. This is especially important if your kitchen is hot.
Step 3
To make the ganache, simply whisk together the chocolate and hot water. I personally prefer the combination of the bitter ganache with the sweet coconut, but you would whisk in 1 tbsp of coconut sugar to add some sweetness if you prefer. Make sure to whisk the ganache until super smooth and no lumps of cocoa powder remain.
Step 4
Remove the bounty balls from the fridge and dip each one into the chocolate. I suggest using a two forks to help you dip each one, but your hands work just as well (lol). Make sure to coat all of the ball. Once the ball is coated, place it back on the parchment paper and repeat with the rest of the balls.
Step 5
If you’re a HUGE chocolate lover, you can place the balls in the fridge to set and then dip them in the chocolate for a second coating. This while make that chocolate coating extra thick and super delish!
Step 6
Additionally, I sometimes like to roll them in more coconut shreds or chopped almonds, but this is really for presentation. Totally optional!
