Kale, butternut squash, prosciutto salad

An easy and delicious salad! Roasted kale with sweet butternut squash, salty prosciutto and parmesan cheese topped with balsamic glaze. Amazing!

Instructions

Step 1
Preheat oven to 425°F
Step 2
Toss butternut squash in 1 tbsp oil and season with salt and pepper. Roast on a sheet pan for 20 minutes.
Step 3
Meanwhile toss the kale in the remaining oil and season. Roast with the squash for 10 more minutes.
Step 4
On a large platter add the kale, then sprinkle the butternut squash over it. Add pieces of prosciutto and shaved strips of parmesan cheese. Drizzle with balsamic vinegar glaze. Serve warm.
