Instructions
Step 1
Blitz the egg in a small food processor for 20 seconds
Step 2
Add the mustard, vinegar/lemon juice, salt and sugar
Step 3
Blitz everything for another 20s
Step 4
Pour in the oil approx 1 or 2 tbsp at a time, blitzing briefly between each addition to ensure it emulsifies.
Step 5
When you get about halfway through the oil, you can pour in larger amounts
Step 6
Congrats, you should now have mayo. Keep it in the fridge for about a week.
