This Ultimate Crumbl Peanut Butter Cookie Copycat recipe is a perfect knockoff of those huge cookies sold at your local Cumbl Bakery. With peanut butter in three different layers, these super soft & tender cookies are melt-in-your-mouth delicious!

Instructions

Filling

Step 1
Place peanut butter chips & peanut butter in bowl. Microwave (1 min.); stir until fully melted & combined. Stir in powdered sugar.

Using a 1 Tbsp scoop, scoop 14 disks onto wax paper-lined cookie sheet. Freezer while you make dough.

Dough

Step 3
Mix flours, powder, soda, cornstarch, & salt in lg. bowl.
Step 4
In separate bowl, beat together softened butter & sugars on med. (3 min.) until light & fluffy. Add peanut butter; mix until well-combined. Add vanilla & eggs, one at a time, scraping down bowl after each addition.
Step 5
Add in dry ingredients on low speed until just incorporated & there are no dry pockets. (When adding in the four use a light hand. It will help to ensure a tender cookie.)
Step 6
Using a â…“ cup measuring cup + 1 Tbsp dough), fill it â…” of the way with dough. Add 1 frozen filling disc, then fill the rest of scoop up with dough to cover filling. Roll in sugar; place on a parchment-lined cookie sheet. (Since these are so large, only 6 cookies will fit on each baking sheet.) Use flat measuring cup to lightly flatten cookie dough. Set in the freezer (30 min.)

Preheat oven to 410°F.

Bake (10 min.)

Cool on the cookie sheet (10 min.); use a spatula to carefully transfer to cooling rack to cool completely.

Decorating

Once cookies are cool, microwave peanut butter until loose. Drizzle in a random pattern using a spoon. (For a more exacting look, place melted peanut butter in a zip bag and cut a small hole in the end & drizzle.)

Use processed peanut butter (natural peanut butter doesn’t work as well.)

The dough doesn’t have to be chilled before baking, (if not chilled, they will flatten out.)

Bake one cookie sheet at a time in center of oven. (Crowding oven will result in oddly shaped cookies.)

FREEZING: The best way to freeze this peanut butter cookie dough is once it has been rolled in sugar & flattened. Bake (11-12 min.) straight from frozen. The fully baked cookies can also be frozen. Place on a cookie sheet & freeze completely then wrap tightly & place in a freezer bag. Thaw before eating.

If you want to make these without the filling they are still quite delicious, but they the recipe will only yield 13 cookies.
