Instructions

Preheat oven to 400°F

Step 1
Toss potatoes on baking sheet with half of rosemary, drizzle of olive oil, & pinch of salt/pepper. Bake (25-30 min.) until lightly browned, tossing halfway through.

While potatoes cook, grate the halved apple onto a paper towel; squeeze out any excess moisture (you can do this over the sink). Put grated apple, pork, & 2 tsp rosemary in lg. bowl. Season with salt (we used 1 tsp kosher salt)/pepper. Combine mixture with your hands, then shape into four 1”-thick patties.
Step 3
Heat lg. drizzle of oil in lg. pan over med.-high; add burgers to pan & cook (4-5 min. per side) until no longer pink in center.
Step 4
Meanwhile, split buns in half horizontally and place on another baking sheet. Toast (3-5 min.) in oven until golden.
Step 5
In another lg. bowl, toss spring mix & apple slices with drizzle of olive oil & 4 tsp balsamic vinegar. Season with salt/pepper.
Step 6
Spread buns with mayonnaise. Serve burgers on buns with some of dressed spring mix on top. Serve potatoes & remaining salad on side.
