Instructions

Step 1
Boil water with salt in a big pot
Step 2
Peel and finely chop onion
Step 3
Smash garlic with knife and remove peel
Step 4
Grate parmesan

Heat oil in a pan over medium and add onion and garlic. Stir constantly just until onion is starting to brown around the edges, 5-7 minutes
Step 6
Add entire tube of tomato paste and red pepper flakes and stir often to coat the onions. Cook until the paste is deep red and starting to brown on the bottom of the pan. 5-7 minutes
Step 7
Add vodka to deglaze the pan and stir to incorporate, scraping the bottom of the pan. Reduce heat to low.
Step 8
In a measuring cup, scoop about 1/4 cup of boiling water from the pot and add the 3/4 cup of cream.
Step 9
Slowly add the warmed cream to the pan, stirring constantly until a smooth sauce forms. Remove from heat.
Step 10
Add pasta to water and cook until al dente. About a minute before it's done take about a cup of pasta water out. Heat the pan back over low.
Step 11
Add the pasta straight from the pot to the sauce

Add half cup of pasta water and stir to incorporate. Slowly add in parmesan stirring constantly to melt. Season with salt and add a splash more pasta water to thin sauce if needed
Step 13
Divide and conquer. Top with some more Parm, a drizzle of olive oil, and torn basil.
