Instructions
Step 1
Fill large soup pot with water, add whole chicken and salt, bring to simmer and let simmer for 1 hour
Step 2
Remove scum from top as it boils
Step 3
Remove chicken, add potato celery and onion and star anise. Simmer 10 mins
Step 4
Shred chicken, remove skin, and add back to pot with carrots and garlic. Let simmer another 10 mins
Step 5
Turn off heat and add fresh herbs. Serve with lemon
