Step 1
Preheat the oven at 220°.
Step 2
Heat up the oil in a big casserole. Fry the onion until soft. Add all of the vegetables. Put the mix in an oven dish. Cook for 40 minutes, or until the vegetables are soft.
Step 3
Add tomatoes and chickpeas. Continue cooking for 10 minutes. Add salt and pepper.
Step 4
Sprinkle parsley and lemon zest.
