Instructions

Step 1
1. For the filling, fry onions in 1 tspn oil till translucent and add turmeric, garlic paste, chilli, salt (to taste) and black pepper. Fry on medium heat for 2-3 minutes. Use minimal oil as we want the filling to be dry.

2. Add the mince and break any lumps up with a wooden spoon to ensure even cooking.
Step 3
3. When the mince is half cooked, add coriander powder, cumin powder and sweetcorn and cook for another few minutes until the mince is fully cooked. Check and adjust seasonings to taste, and mix through the chopped coriander. Remove from heat and cool completely.
Step 4
4. Lightly flour a flat surface and roll pastry thinly in to a rectangle shape. Trim the edges to make it neat and even.
Step 5
5. Cut in to squares for the size of pastry you want to make.
Step 6
6. Fill the middle of each square with a spoon or two of filling. Careful not to over fill. Keep a 1 cm clear edge around the filling to enable easy folding.
