Pressure Cooker Lemon Garlic Chicken

Lemon and garlic are such a delicious combination. This chicken is tender, juicy, and full of flavor thanks to the pressure cooker doing all of the work. It is simple, healthy and perfect for a quick and easy weeknight meal. Serve with pasta or zoodles, asparagus, more lemon juice, and sliced lemons, if desired.

4boneless skinless chicken breasts
¼ teaspoongarlic powder
¼ teaspoonsmoked paprika
sea salt
ground black pepper

2 tablespoonsolive oil
divided

sliced or minced
1lemon juiced
⅓ cupbroth
homemade or low-sodium chicken
1 ½ tablespoonsItalian seasoning

Instructions
Step 1
Season chicken breasts with garlic powder, smoked paprika, sea salt, and black pepper.
Step 2
Heat 1 tablespoon olive oil in inner pot of pressure cooker set to Sauté on Normal. Add chicken breasts and cook until slightly browned, 2 to 3 minutes per side. Transfer chicken to a plate.
Step 3
Add remaining 1 tablespoon olive oil to inner steel pot of pressure cooker; cook and stir onion, garlic, and lemon juice in hot oil until fragrant, about 1 minute.
Step 4
Mix chicken broth and Italian seasoning into onion mixture; top with chicken.
Step 5
Lock pressure cooker lid in place and set steam vent handle to Sealing. Select Poultry and cook for 9 minutes on High Pressure. Turn steam vent handle to Venting to quick-release pressure.
Step 6
Remove chicken from pot and top with onion-garlic sauce. Top chicken with parsley and a squeeze of lemon.
