Ultimate Instant Pot: CARNITAS

By cutting the pork into cubes before you cook it in the Instant Pot, you can make carnitas in just over an hour from start to finish. The blend of spices, onions, garlic and orange juice infuses flavour into the pork as it cooks, and a touch of sugar helps it to brown. After pressure-cooking, I shred the pork and crisp it in a frying pan or under the grill.

Instructions

Step 1
Add the orange juice, chilli powder, cumin, red chilli flakes, oregano, cinnamon, brown sugar and salt to the Instant Pot and stir to combine. Add the onion, garlic, bay leaf and cubed pork and stir to evenly coat the pork.

2 Secure the lid and set the Pressure Release to Sealing.Select the Meat/Stew setting and set the cooking time for 35 minutes at high pressure. (The pot will take about 15 minutes to come up to pressure before the cooking program begins.)
Step 3
3 Let the pressure release naturally for 20 minutes, then move the Pres ure Release to Venting to release any remaining steam. Open the pot and, using tongs, transfer the pork to a plate or carving board. Using two forks, shred the meat into bite-size pieces.
Step 4
4 Wearing heat-resistantmitts, lift out the inner pot. Pour the cook­ ing liquid into a fat separator, then pour the liquid back into the inner pot. Reserve 1 tablespoon of the fat for crisping the pork and discard the rest. Return the pork to the inner pot with the cooking Liquid, then return to the Instant Pot housing.
Step 5
5 Secure the lid, set the Pressure Release to Venting, and leave the pork in the Instant Pot on the Keep Warm setting for up to IO hours, until you are ready to crisp it up and serve.
Step 6
6 In a large, heavy frying pan over medium-high heat, warm the reserved pork fat. Using a slotted spoon, transfer the pork to the pan, spreading it in an even layer. Cook for 8 to 10 minutes, stirring occa­ sionally, until the pork is crisp and browned. (Alternatively, use a slotted spoon to transfer the pork to a rimmed baking sheet, spreading it in an even layer, and grill until crisp, about S minutes.)
Step 7
7 Serve the carnitas on warmed tortillas, sprinkled with onion and coriander. Pass hot sauce alongside.
