CHICKEN SCHNITZEL •
An absolute family favourite from hubby to the kids. With a side of veg, potato bake or mash & you’ve got the perfect dinner 👌🏼 .
What you’ll need:
1 kg breast fillet, thinly sliced
1/2 cup flour
Crumb Coating:
2 cups dry breadcrumbs
1/2 cup parsley, finely chopped
2 tsp sumac
1 tsp onion flakes
1 tsp garlic powder
Salt & pepper
Egg Wash
1 egg
1 cup milk
Method
1. Put chicken in a large snap lock bag with flour. Seal bag. Toss chicken to coat evenly with flour.
2. In a bowl combine crumb coating ingredients. Mix well.
3. In another bowl, combine egg & milk & mix using a fork.
4. One at a time, remove excess flour off chicken. Dip in the egg wash and then place in the crumb coating to cover evenly. Repeat.
5. Flash fry in hot oil 190° for approx 2 minutes until it just seals & changes to a light golden colour.
6. Place chicken on an oven proof rack with a sheet tray under. This will stop the chicken from going soggy.
7. Place chicken in a 200°C preheated oven for 10 min.
Note: you can fry for longer until chicken is cooked through or for a healthier option bake without frying. This method of flash frying & then baking I find gives me the perfect crispy coating & colour without over cooking the chicken 👌🏼
