Ingredients

¼ cupolive oil

1 tablespoonolive oil

2 teaspoonscumin seeds

2yellow onions
small, finely diced

2 tablespoonsground coriander

15 ozcan great northern beans
drained and rinsed

½ teaspoonsalt

1serrano chili
small, finely chopped

2garlic cloves
minced

2 tablespoonslime juice

1 lbpoblano peppers
small, slit length-wise
Instructions
Step 1
Pre heat oven to 350 F
Step 2
In large skillet over med-high heat, warm 1/4 cup oil. Once simmered, add cumin seed cook less than one minute.
Step 3
Add onions and coriander, stirring until onions are translucent (about 5-7 minutes). Let cool to room temperature.
Step 4
Mash white beans with potato masher or fork until consistency of chunky mashed potatoes. Add salt, chile, garlic, lime juice and cooled onions. Mix well. Add salt to taste.
Step 5
Stuff poblanos with filling. Arrange peppers slit side up on baking sheet. Drizzle with oil.
Step 6
Bake 45 minutes or until poblanos have shriveled and wrinkled around slits and turned dark green. Serve with lime wedges.
