Instructions
Step 1
Combine eggs, milk, sugar, salt, vanilla, and cinnamon in a large bowl. Stir well
Step 2
Break bread slices into small pieces and add to egg mixture. Stir well.
Step 3
Allow to set for 30 min to 1 hour. Bread should be soft and broken up completely.
Step 4
Pour 2 qt bread mixture into steam table pan. Lightly coated with pan release spray. Spread evenly.
Step 5
Pour 3/4 cup (about 6 oz) maple syrup over each pan in a swirling motion
Step 6
Bake: Conventional oven: 400 degrees F for 25-35 minutes
Step 7
CCP: Heat to 165 degrees F or higher for at least 15 seconds
Step 8
CCP: Hold for hot service at 140 degrees f or higher
Step 9
Allow to rest for 20 minutes before cutting
Step 10
Portion: 1 piece about 2 3/8" x 4"
