Mango Salad

A fresh spring-summer salad that balances the sour-sweetness of the mangoes (depending on how in-season they are) with tomatoes, spring onions, and lemon juice. It pairs well with garlic butter shrimp on corn tortillas with guacamole for some great seasonal tacos!

Instructions

Step 1
Chop the mango into bite-sized pieces.

Cut half of a tomato. Save the rest for later. Chop the half tomato into bite-sized pieces, similar to the mango chunks or smaller.

Take a handful of spring onions and finely chop the green parts of the spring onions.

Add 2 tbsp of lemon (or lime) juice. Mix well. Add salt and pepper to taste.
