Biscoff Cheesecake Pizza

Pizza with biscoff spread and vanilla cheesecake, topped with caramel walnuts. Makes 4 pizzas but will serve 12 for dessert

The Dough
Step 1
Mix the yeast, water and sugar and sit for 10 minutes
Step 2
Add the flour, salt, and 2 tbsp oil to a bowl
Step 3
Pour in the yeast mixture and thoroughly combine, and knead for 10 minutes
Step 4
Place in an oiled bowl covered with cling film and leave in the fridge overnight
Step 5
Cut the dough into 4 equal pieces
Step 6
Form each piece into a doughball by tucking the loose pieces around and underneath and pinch.
Step 7
Place the pinch side down on a board and slide your flat hands underneath palm side up rotating the dough to form it into a neat doughball

Place the doughballs on a floured tray with plenty of space. Flour the top and cover with cling film and sit at room temp for 2 hours.
The Cheesecake Mix

Add the double cream to a bowl and whisk to form peaks.

Add the cream cheese, vanilla extract and sugar and whisk to combine
Caramel Walnuts
Step 11
Place the walnuts in the oven at 180 for 15 minutes
Step 12
Add the sugar and salt to a thick based frying pan on medium heat. Once it starts to melt, feel free to stir.

Wait til fully melted and golden brown colour
Step 14
Wrap the walnuts in kitchen roll and shake around a bit. The bitter skins should fall of a bit

Add the skinless walnuts into the caramel and combine

Tip out onto a non stick surface and allow to cool before shopping up into little bits
The Pizzas
Step 17
Lay the dough on a floured surface and press all 8 fingers down the middle leaving a crust
Step 18
Place your palms on the dough and stretch outwards and rotate, stretching the dough out
Step 19
Pick it up and throw it between your hands to stretch

Melt the biscoff spread and spoon 2 tablespoons all over
Step 21
Lay blobs of the cheesecake mix over it too
Step 22
Either cook in a 350C pizza oven for 2 minutes or bake at 220 for 10 minutes

Chop up the nuts and sprinkle over the top
