Step 1
Preheat oven to 350 f
Step 2
Mix sugar, vanilla extract, apple sauce, brown sugar, eggs and olive oil until combined.

Sift in flour, baking soda, salt, ground cinnamon and baking powder and mix until combined.

Fold in carrots and walnuts
Step 5
Pour into 9" baking tray (divided or not)
Step 6
Bake for 30 (if divided) to 45 minutes
Step 7
Let cool on cooling tray
Step 8
Mix butter, icing sugar and cream cheese for 5 minutes on high
Step 9
Spread 1/3 of icing in middle of cake (if 2 cake or cut in half) and then spread the rest on top and the sides.
