Instructions

Step 1
In a large pot, boil the sweet potatoes until tender when stuck with a fork, any- where from 20 to 40 minutes, depending on the size of your sweet potatoes.
Step 2
Remove from heat, allow to cool enough to handle, then peel.
Step 3
Slice into 1/4-inch slices, and arrange in a 9 x 12-inch baking dish.
Step 4
Preheat the oven to 400 ° F.
Step 5
Mix together the melted butter, honey, and Autumnal Herbs.
Step 6
Pour this over the sweet potatoes, then sprinkle with brown sugar.
