Instructions

Step 1
Place the cous cous in a large bowl. Cut the courgette and aubergine into either chunks or strips. The chunks can be fried in the olive oil until tender, the strips can be griddled on a griddle pan.
Step 2
Toss the cooked veg with the couscous along with the tomatoes and pepper strips.
Step 3
Blitz the garlic, basil, 2 tablespoons of olive oil, salt and pepper together in a food processor or crush together in a pestle and mortar to make the basil dressing.
Step 4
Fold the basil dressing into the salad and season well.
