Ingredients
4 servings
1 cupbulgur
fine
2 cupsbaby spinach leaves
1 cupmint leaves
1 ½ cuplebanese cucumbers
cut into slices
1 ½ cupscherry tomatoes
cut in half
6radishes
small, cut into thin slices
1avocado
cut into slices
1can chickpeas
rinsed and drained
1 cuppomegranate kernels
1 tspSumac
For Dressing
Instructions
Step 1
Rinse the bulgur and soak it in hot water for about an hour until the bulgur is half cooked and soften, allow it to cool.
Step 2
Reserve a few slices of avocado and 1-2 tablespoons of pomegranate for decoration.
Step 3
In a bowl place all of your ingredients, add the lime juice, olive oil and pepper. Sprinkle the tsp of sumac, Toss gently till everything is mixed through.
Step 4
Before serving, drizzle with pomegranate molasses.
