Instructions
Step 1
My steak was frozen in the vacuum pack from the store. Set the sous vide for 131°, and at least 8 hours, 10 hours if frozen.
Step 2
After 10 hours remove the steak and pat dry.
Step 3
Brush one side with olive oil. I prefer a harissa infused oil. Add generous shake of the Montreal. Let sit 5 minutes. Repeat on the other side.
Step 4
Heat a cast iron skillet to sear. Add o/o and butter just to coat the bottom. Sear 60 seconds each side.
Step 5
Remove from pan. Let rest 5 minutes and slice against the grain.
