1 cupsorghum
uncooked

1 cupmayocoba beans
uncooked

6 cupswater

1onion
large, chopped

4cloves garlic
minced

2 cupscarrots
sliced

4 cupsyellow potatoes
sliced

1 poundgreen beans
cut

½ cupmushrooms
minced

28 ozcan fire roasted crushed tomatoes

1 teaspoonSmoked paprika
optional

1 teaspoonGround nigella seeds
optional

1 teaspoondried Basil leaves
optional

1 teaspoonsriracha
optional
Instructions
Step 1
Add sorghum, beans, water, onion, and garlic to Instant Pot. Cook for 35 minutes on the multigrain setting. Then instant release.






Step 2
Add potatoes, carrots, green beans, mushrooms, and tomatoes to the Instant Pot. Set to steam for 8 minutes. Allow 10 minutes of natural release then quick release.






Step 3
Season (Optional) - keep it plain for picky pallets, or add your favorite seasonings. Suggestions: smoked paprika, ground nigella seeds, basil, hot sauce.
