Ingredients

1 tablespoonvegetable shortening
¼ cupwater
ice
½ teaspooncider vinegar
cooking spray

1 poundshrimp
uncooked, peeled, deveined, chopped
2 ouncescream cheese
softened
2eggs
beaten
2 teaspoonsall-purpose flour
1 cupevaporated milk
½ cupfontina cheese
or Gruyere, shredded
1 ½ tablespoonsfresh dill
chopped
½ teaspoonsalt
2 teaspoonsold bay seasoning
Instructions
Step 1
Pastry: combine flours, sugar, and salt. Cut in the butter and shortening with a pastry blender. Combine ice water and vinegar; toss with a fork to add to crumbled flour mixture.
Step 2
Press into deep dish pie plate coated with cooking spray. Bake at 375° for 5 minutes. Remove from oven and cool.
Step 3
Pie Filling: Heat a large skillet over medium heat. Coat with cooking spray. Add shrimp and cook for 1 minute until they turn pink. Cool.
Step 4
Combine cream cheese and half of egg mixture; beat 1 minute until well blended. Beat in the the rest of egg mixture and the milk.
Step 5
Add shrimp, cheese, dill, salt, and Old Bay. Pour into pie crust. Bake at 375° for 40 minutes or until set.
Step 6
Let stand 10 minutes before serving.
