Step 1
Preheat oven to 190C (fan).
Step 2
Cut the zucchini in half lengthwise. Place the zucchini halves in the prepared baking dish.
Step 3
Mix olive oil with thyme, salt and pepper. Brush this mixture over the zucchini halves.
Step 4
Bake for 30-35 minutes.
Step 5
Use a spoon to carefully scoop the flesh out of the zucchini and put it in the bowl. Remove all extra liquid. Add freshly grated cheese, salt, pepper and oregano. Mix well and scoop the mixture into the zucchini boats.
Step 6
Bake for another 10-15 minutes or until golden.
Step 7
Garnish with parsley if desired
