Shrimp Salad in a Pineapple

Who doesn't love a great seafood salad? I have a fabulous Shrimp Salad recipe that I paired with fresh fruit. I used a fresh pineapple, cut in half and hollowed out. Once I made my Shrimp Salad, I lined the inside of the pineapple half with lettuce and laid the shrimp salad on top. I surrounded the pineapple with my other favorite fresh fruits. But why limit yourself to just Shrimp Salad? Crab salad, egg salad or any of your other favorite salads would go good as well.
