Instructions
Step 1
Preheat oven to 450 degrees spray a large roasting pan with gluten free nonstick cooking spray.
Step 2
Season each beef tenderloin roast with salt and pepper, heat oil in a large skillet over medium-high heat, until hot. Sear roasts for three minutes on all four sides until well browned.
Step 3
In a small bowl, combine butter, garlic and Rosemary together. Rub the butter mixture on beef.
Step 4
Transfer beef to prepared roasting pan, roast for 20 to 25 minutes for medium rare, or until a meat thermometer inserted in thickest part of registers 135. For medium doneness, cook until thermometer reaches 145 degrees (meat will continue to rise about 5 degrees while meat rests) Transfer the roast to a carving board and let rest for 15 minutes. Carved beef tenderloin into 1/2 inch thick slices and serve.
