Spaghetti Carbonara
PAVLOVA - why not make a Pavlova with the egg whites you have left over. You need to buy 1kg strawberries, 400g redcurrants or other berries, 700ml double cream and icing sugar.
I do 3-4 X this recipe and use a pot of pancetta for each packet of spaghetti.

Instructions
Step 1
Cook the spaghetti in salted boiling water until al dente.
Step 2
In a saucepan, slowly shallow fry the pancetta in butter until very crispy.
Step 3
Drain the pasta and add to the cooked pancetta.
Step 4
Immediately add the egg yolks, season with salt and pepper and stir very well until you have a creamy texture.
Step 5
Add the parmesan cheese and serve immediately.
