Banh mi is a popular Vietnamese sandwich with a French flair. Itās traditionally made with crusty baguette, a hefty chunk of meat, pickled veggies, and spicy condiments. Our chefs didnāt mess with the veggies or the condiments, but they did swap out baguette for buttery brioche and meat for shrimp. Itās refreshingly light (especially with the carrot fries) but unbelievably satisfying.

Preheat oven to 450Ā°F
Step 1
Toss carrot fries on baking sheet with drizzle of oil & pinch of salt/pepper. Bake (8 min.) toss, return to oven to bake (6-8 min. more) until golden brown & tender.
Step 2
Place cucumbers in sm. bowl with white wine vinegar, Ā¼t sugar, and pinch salt/pepper.
Step 3
In sm. bowl, combine mayo & Sriracha.
Step 4
Split brioche buns; place in oven to toast (5 min.)
Step 5
Heat drizzle of oil in lg. pan over med.-high. Add garlic; cook (30 sec.) until fragrant. Add shrimp; toss (2-3 min.) until opaque. Remove pan from heat & stir in lime zest and a squeeze of juice. Season with salt/pepper.
Step 6
Assemble and serve: Spread buns with Sriracha mayo; top with shrimp, pickled cucumbers, shredded carrots, & a few cilantro sprigs. Serve carrot fries on side. Enjoy!
