Instructions

Fried vegetables

Step 1
Cut the carrot, paprika and onion into thin slices. Chop of the edges of the sugar snap peas
Step 2
Heat the oil in the pan. Reduce the heat to medium and add the onion. Fry for 1min. Then add the carrot and paprika slices. Fry for another 3min. Now add the sugar snap peas
Step 3
Season with the soy sauce and fish sauce. Stir well until combined. Fry for another 2min

Prawns

Step 4
Mince the garlic
Step 5
Heat the oil in the pan. Leave the heat on high and add the prawns. Fry for 1min each side. Then add the garlic. Season with salt, pepper and chili flakes. Fry for another 2min.

Sauce

Add the coconut cream and curry paste to a jar. Stir until well combined.

Sandwich

Step 7
Cut the bread in half. Spread both sides with the sesame oil. Toast until golden brown.
Step 8
Spread the bottom half with the sauce. Then top it with the vegetables and prawns.
Step 9
Cut the lime in half and chop the cilantro.
Step 10
Pour the lime juice over the sandwich. Sprinkle on the cilantro.
Step 11
Place the second half of the bread on top and enjoy!
