12 ozshrimp
jumbo, tail-on
1 tspfish sauce
½ Tbspgarlic powder
1 Tbspchili sauce

6egg roll wrappers
sliced down the diagonal, to make 12
frying oil
flour paste
Instructions
Step 1
clean and prepare the shrimp, leaving the tails on. make 4 shallow cuts on the belly side of each shrimp (without cutting all the way through), then gently straighten them to prevent curling during frying. season the shrimp with fish sauce, garlic powder, and chin-su original chili sauce.
Step 2
in a small bowl, mix all-purpose flour and water to create a flour paste for sealing the rolls. alternatively, you can use an egg wash.
Step 3
cut 6 egg roll wrappers diagonally to create 12 triangles. place a wrapper on a flat surface with a corner facing you. position a shrimp on the lower third of the wrapper, with the tail sticking out from the long end and the head facing the top of the triangle.
Step 4
carefully wrap the shrimp in the egg roll wrapper, tucking in the open corner. continue rolling tightly into a cigar shape until you reach the last inch. brush the last inch of the wrapper with flour paste before sealing it completely.
Step 5
heat the frying oil and fry the rocket shrimp rolls until golden and crispy. enjoy!
