We love this super hearty Taco Salad so much! It's loaded with all the delicious things like taco seasoned ground beef, shredded cheese, avocado, black beans, diced tomatoes, and so much more!

Ingredients
2 servings
1 ouncetaco seasoning
¼ cupwater
2 tablespoonsolive oil
1 poundlean ground beef
½ cupmexican crema
2 tablespoonswater
optional
1 ½ tablespoonschipotle peppers
diced, in adobe
1green onion
cut into 1 inch pieces
½ teaspooncumin
0.5lime
juiced
salt
to taste
pepper
to taste
5 cupsromaine
shredded
⅔ cupcorn kernels
blistered
½ cupcanned black beans
drained
4 ouncescheddar cheese
shredded
2roma tomatoes
seeded and diced
1avocado
diced
2 handfulstortilla chips
cilantro sprigs
for garnish
Instructions
Step 1
beef: Place a large pan over medium-high heat.
Step 2
In a small bowl stir together taco seasoning and water to form a paste.
Step 3
Add oil and ground beef, using a wooden spoon to break the beef up into small pieces. Cook until beef has just browned, 2 to 3 minutes.
Step 4
Pour paste into pan and stir into beef. Continue to stir until beef is evenly seasoned and has cooked through, 2 to 3 minutes. Remove from heat and set aside to slightly cool.
Step 5
dressing:In a food processor combine all dressing ingredients and blend together until smooth.
Step 6
assembly:In a large salad bowl combine romaine, chips and 1/2 dressing. Toss together until evenly coated.
Step 7
Add corn, tomatoes, black beans, shredded cheese, sliced jalapeno, and avocado. Drizzle with remaining dressing and toss together. Serve.
