Swedish Apple Cake | Svensk Äppelkaka

9 steps
Prep:30minCook:45min
Every year, I bake this cake during the season to experience its sensational taste again — creamy soft crumbs caress creamy soft apples. Every bite is delicate and gentle, like the October sun before sunset. This cake is a calorie bomb! There are no exotic ingredients in this recipe. The key is their ratio. If reading the list of ingredients makes you feel like you want to reduce the amount of sugar or butter, stop and consider another recipe.

Instructions

Step 1
Preheat oven to 375F, baking stone on middle rack. Measure all ingredients. Prepare all tools and equipment.
Step 2
Place 4 refrigerated eggs into a bowl with hot water (200F) for 10 minutes to warm them up. Mix them with sugar and beat on high speed until foamy and all sugar is dissolved. Using a stand mixer is better because this step takes time.
Step 3
Wash, peel, quarter, and remove the core of apples. Drizzle the slices with lemon juice and sprinkle with sugar and cinnamon in a large bowl.

Step 4
Soften butter and warm milk.
Step 5
Mix flour and baking powder and sift them together.
Step 6
The egg foam should be fluffy and stable, with sugar completely dissolved by this time. Add half of the flour to fold it into the foam. Next, add half of the softened butter, fold it into the batter, and half the milk. Fold portions of the rest of the flour, butter, and milk in that order, alternating. Don't deflate the egg foam much, and mix all ingredients well. Check for lumps on the bottom of the bowl.
Step 7
Pour the batter into the baking pan and arrange the apple slices vertically. Their tops will be above the surface of the dough. When the batter rises during the baking, it will cover apples.

Step 8
Bake for 15 minutes, reduce the temperature to 350F and bake for 30 minutes more. Turn off the heat and keep inside the oven for another 15 minutes. Open the oven door and let the cake cool down inside the warm oven for another hour. If your baking pan doesn't have a removable bottom, take it out only when it is at room temperature.
