Bacon and Pea Risotto

Instructions

Step 1
Add chicken stock and salt to a pot and bring to a simmer on medium-low heat.
Step 2
In a large pan, heat olive oil and add onion and cook until soft, about 4 minutes.
Step 3
Add garlic, thyme and arborio rice and stir. Toast the rice and continue to stir until the edges have started to become translucent, about 5 minutes.
Step 4
Add wine and continue to stir until it has evaporated.
Step 5
Start adding the chicken stock to the rice gradually. Allow the stock to absorb into the rice before adding more.
Step 6
Remove the pan from heat and add the bacon, sweet peas and smoked gouda.
Step 7
Stir until the peas have defrosted and the gouda has melted. Stir in butter and serve with fresh cracked pepper.
