Instructions
Step 1
1. In a 12inch sauce pan heat the butter and sweetener together over medium heat until the sweetener dissolves. Then whisk in the heavy cream and bring to a boil. Allow to boil for 2 full mins continuously stirring. DO NOT LET IT BURN.
Step 2
2. Remove from the heat and add the nuts and vanilla and stir. Let cool.
Step 3
3. Preheat the oven to 325F. Place the oven rack in the middle.
Step 4
4. In a large bowl mix together the dry ingredients.
Step 5
5. Then mix in the butter, extract, and egg.
Step 6
6. Divide the batter into 15 EQUAL sized balls of dough. Place the balls on a parchment-lined baking sheet. Cook for 13 mins.
Step 7
7. Then take a TBSP and put it in the center of the cookie to flatten. Top the center with 1 tsp of the filling (it will be hard by now and I usually roll it into a ball). Return the baking sheet to the oven for 7 more mins.
Step 8
8. Allow cooling.
