Instructions
Step 1
Separate 2 egg yolks from egg whites
Step 2
Add 3 table spoons of water and 1 table spoon of Lemon juice to egg yolks
Step 3
using a whisk or fork mix the eggs ,water, and lemon juice thoroughly till there are no orange streaks.
Step 4
Pasteurize your eggs in a microwave in ten second intervals until eggs reach a temperature between 160 and 165 degrees. Do Not Exceed 165. You do not want to cook the eggs.
Step 5
Strain eggs into a jar or container that will accommodate your emulsion blender to remove any curds from the pasteurization process
Step 6
Add 1/2 teaspoon salt, 1/2 teaspoon Dijon Mustard, 1/4 teaspoon sweetener and 1 cup Extra Light Virgin olive oil (make sure it is extra light otherwise it will taste oily)
Step 7
Mix with Emulsion blender till full incorporated and place in refrigerator to setup.
Step 8
Mayo should last about a month stored in the refrigerator
