No. Basically, there are two main types of beef ribs: short ribs and back ribs. Both are tasty, but they are quite different cuts of meat. Beef back ribs are cut from the back of the cow in the dorsal area behind the shoulders. The meat is found between the bones rather than on top of them, so it can be harder to get to the meat. Beef short ribs, also known as plate short ribs, are a cut of meat from the lower part of the cow’s rib cage behind the brisket. The meat in beef short ribs is thick and tends to sit on top of the bones rather than just between the bones. Do beef short ribs or beef back ribs taste better? Beef short ribs are a popular choice for grilling or barbecuing. They have a lot of marbling and a high fat content, so are popular if you want to cook them with a “low and slow” approach because they take quite a long time to tenderize. Back ribs are more tender and have less marbling than short ribs, so are leaner. They cook more quickly and are a good choice for the smoker. They also have less meat on top of the bone but the meat is fantastic quality, as it comes from the same area as prime rib. This is also why beef back ribs tend to be more expensive than short ribs. Because they are leaner, they are also a better option if you’re trying to limit calories or fat intake and want to make healthier choices.
