Slow Cooker BBQ Beef Shortrib Burrito

Instructions

The Beef

Step 1
Mix the honey and mustard and brush it over the beef short-ribs and cover in the BBQ seasoning and extra sugar and salt if needed
Step 2
Pour the Guinness and beef stock into the slow cooker with the vinegar and garlic cloves, lay the beef and slow cook on low for 6 hours til falling apart
Step 3
Remove the beef and wrap in foil to keep warm
Step 4
Add the liquid into a frying pan and add 2 tbsp brown sugar, 2 tbsp cider vinegar, Amy additional spices, and 3 tsp cornflour mixed with water and whisk to thicken. Add more if required

Cajun Air Fries

Step 5
Slice the potatoes into 1cm chips
Step 6
Add the oil and salt and toss to coat
Step 7
Add into the air fryer at 160C for 30 minutes, flipping and rotating twice during cooking
Step 8
Pull out into a bowl and add Cajun slices and toss around to coat

Guacamole

Step 9
Finely dice the red onion, chilli, coriander, and mince the garlic
Step 10
Halve, destone and peel the avocado and mash in a bowl then add the chopped bits, salt, and juice of the lime and mix to combine
Step 11
Taste and adjust flavour with salt and lime to your liking
Step 12
Lay down all your burrito fillings onto the wraps and wrap em up, wrap in a griddle pan, and enjoy!
