Bright orange carrots are a staple with “meat and two veg” dinners, and form a crucial part of a very popular barbecue side dish. Coleslaw, of course! The orange color we know now wasn’t how carrots always came though. Originally, they were purple or white, and you can still find unusually colored varieties at some stores and farmer’s markets. How did they become orange? A mutation removed the purple color and resulted in yellow carrots, and these were eventually developed into the orange ones we know today. The root of the lesser-known wild carrot plant can also be eaten. Granted, it's not very sweet and it can be quite tough and stringy. But once cooked, it is edible. The same goes for the flowers, which you may know as Queen Anne’s Lace. Beware though, that there are quite a few poisonous plants which resemble wild carrots. Carrot juice is another way some people get their veggie intake. And no wonder – carrot juice provides potassium, carotenoids, and vitamins A, C, and K. Possible benefits of a diet rich in carrots may include improved eye health and stronger skin. Carrot juice has less fiber than whole carrots and contains natural sugars. Though it’s low GI, it can still spike your blood sugar levels. Did you know guzzling lots and lots of carrot juice could even turn your skin yellow or orange? Truly!
